To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin

200ml clementine cordial (as made above)
Whole cranberries, to garnish

Directions

To prepare the Citrus Syrup: Put the listed items into a pan, heat until it reaches a light boil, stirring to dissolve. After that, take off the burner and leave to cool down fully. Decant to a sterilised bottle, close it and refrigerate it in the fridge, where it will keep for around four weeks.

For the Batch Mix: Combine every liquid ingredients in a sizeable container, leave to sit for one hour, then strain best through cheesecloth, so it's perfectly clear.

When ready to serve: Add 85ml of your premix into a stirring glass filled with ice, gently stirring gently for a minute to chill. Pour to a frosted cocktail glass or similar, garnish with the cranberries adding the final touch using a brief mist of the essential oil over the drink.
